Cranberry Plantain with Chewy Cocoa Cookies

Beautiful Sunday to start fixing the mistakes of yesterday, hopefully today is not too bad to make the body and the health of our body along with making a dish that is delicious and healthy of course. Sweet crunchy food delicious to eat while watching television with our families.


A recipe from ms.erica which incorporates some interesting material and need to try. Made from bananas and some wheat will make us become more thoughtful and not too thin.

Cranberry Plantain with Chewy Cocoa Cookies

1 semi - ripe or ripe plantains
2 eggs (or flax eggs *)
1/4 cup powdered stevia or coconut sugar
1 tsp. vanilla extract
1/4 cup cocoa powder
2 cups oats (gluten - free, if Necessary)
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup dried cranberries (sweetened juice, if possible)

How to Make Cookies

Puree bananas in a food processor. Add sweetener, eggs, cocoa and vanilla and blend until fairly smooth. Add remaining ingredients, except cranberries, and push it until it joins together. Stir with a cranberry puree with a hand.

Apply a coating pan with a little margarine, and shape the dough with a large spoon. Bake about 350F for 10 minutes. If it is finished in baked. Wait for it to cool before you remove it from the grill. Makes 30 cookies. Require air tight container in order to hold until 1 week or frozen.
