Healthy Caribbean Red Bean Soup

 

Soup recipes inspired by fresh vegetarian soup in Toronto area. This version is the version that is probably better than ever. Things that will make eating more lively family. Foods such as whole wheat bagel or roll, and can be used as a complete dinner served to the role of grain and fresh green salad. That can be easily frozen.
2 tsp. vegetable oil
1 red bell pepper and 1 green bell pepper, diced
1 onion, diced
1 large or 2 small carrots, diced
2 tbsp. fresh ginger, grated
2-4 cloves garlic (to taste)
2 tbsp. curry powder good quality
½ tsp. ground allspice
Salt and pepper, to taste
1 can light coconut milk (14 fl oz)
1 large can diced tomatoes, with juice (28 fl oz)
5-6 sweet potatoes (about 6 lbs), peeled and cut into eighths
4 cups vegetable stock (use a good quality brand in tetra pack organic if possible)
Hot sauce (to taste)
1 can red kidney beans, drained and rinsed (19 fl oz)
Juice of 1 lime 
How to Cook 
Pour the oil into a large pot on the fire and sauteed peppers, onions and carrots until tender. Time spent approximately 7 to 8 minutes. Add ginger + garlic powder + times + salt and pepper seta stir for 2 minutes continuously. After all is finished add the vegetable broth and hot sauce. Lower the heat and cover the pan to let it boil for 30 minutes until the sweet potato becomes mature. Take a potato and parsnip puree to the soup for the last add the beans simmer for 30 minutes.
