Healthy Kale Salad in Winter |

Kale Salad in Winter
4 cups chopped fresh kale, stems removed
1/2 cup dried cranberries
1 small bulb fennel, sliced very thin
1 small red pepper, diced
1/2 cup red onion, minced
2 cups brown rice, cooked
1 cup slivered almonds, toasted
juice of one lemon
3 cloves garlic, minced
2 tablespoons rice wine vinegar (or other vinegar)
1 tablespoon dijon mustard
1/4 cup extra virgin olive oil
Provide a large bowl and mix the kale, cranberry, fennel, red pepper and red onion. Add Brown rice, while still warm. Try cooking vegetables with vitamin and nutrition to briefly contain is not lost and also kept an eye on texture of salads. Add the almonds to the salad and toss well.
